Josh Niland is an Australian chef, restaurateur, and author who has transformed how the world thinks about cooking fish.
Based in Sydney, Josh runs a group of seafood-focused businesses with his wife and partner, Julie Niland, anchored by their flagship restaurant, Saint Peter in Paddington.
He’s best known for pioneering a “whole fish,” nose-to-tail approach to seafood — using parts most chefs discard and popularising dry-aging fish for days or weeks to intensify flavour. This philosophy has grown into a small empire, including two Fish Butchery shops, the restaurant Peterman, and takeaway Charcoal Fish.
His 2019 book, The Whole Fish Cookbook, made him the first Australian to win the James Beard Foundation’s Book of the Year award.
He’s since published two more books and picked up honours including Chef of the Year at the 2023 Sydney Morning Herald Good Food Guide Awards and the Game Changer Award at LA LISTE World Restaurant Awards in Paris.
